Picked this up in Luz-Saint-Sauveur, in a deli-type local products shop at the foot of the Tourmalet climb, and the turn for the Luz-Ardiden ascent. Shortly after getting back home, Leah invited me for dinner, with a… challenging… starter to match: roast peach, Speck and maple-syrup vinaigrette salad – meaty, sweet, smoky, spiced and acidic. Then I had the brainwave of this, and it matched up pretty well. Medium depth lemon-green colour. Medium+ intensity nose with some bacon fat, lots of spice, subtle cinnamon-apple, and ripe quince fruit. Balanced palate: ripe and rich, but not overly so, and wears its alcohol well. Medium acidity, medium+ body. Dry, spicy grapefruit pith, and more cinnamon-apple flavours. Medium+ length.
