Good quality, mature vintage Blanc de Blancs. Complex tertiary development of mushroom, nutty almond and toast on the nose, over creamy vanilla and cereal. Some vegetal notes. On the palate, aged notes of yeast extract, toasted almond and wax. Some butter hints. Toasty firmness on the mid-palate, and a spicy, caramel finish. Light-medium body. Fairly fine mousse. Nice.
