From the Cave of Delights, like Montus XL ’96. Initially not quite a harmonious whole, but on warming and extended aeration, came together well to show what aged quality Chablis can be. Deep gold, but no ‘premox’ copper glints. Slightly bready entry to the med+ nose, that develops into fresh toast. Then hazelnut maturity with some butter and hints of fresh mango and greengage or yellow plum behind. Initial vegetal notes disperse. A nice slice of lemony, med+ acidity. The med body enriches to med+ and flavour that also fills out. Toasty, nutty mid-palate over citrus, with med+ finish. Good.
