Another unfiltered, longer-aged Fino (hence “Perdido”), with distinctly unusual, and complex character. Deep gold, with a medium, watery rim. On the nose, this jumped-out on opening, with huge, pronounced notes of salted anchovies. This toned down over the days, but still kept a nice, complex edge to this good but distinctive Fino. Opened into toasted almond, grilled bread, brine and green apple skin hints. On the palate, honeyed touches over salty, briny almond flavours. Some hints of vanilla, dried fruit and apples. More toast on the medium+ length finish. Very different and outstanding.
