Deep amber – with almost tawny glints, and a broad, amber rim sporting just a hint of olive. Medium to high intensity walnut marzipan nose with both cinnamon and very apt coffee-cream notes. Fresh wood and some polished mahogany, with some dried, mixed peel in the background. Rich, but dry. Full-bodied with a medium acidity, salty palate. Some oak tannin. Oak-spice and coffee flavour, with a fairly powerful mature cheddar under-tow. Full flavour. Long cheese and walnut finish.
