Another fine one from Defaix. Bought this at the same time as the 1998 vieille vignes Chablis. Since read reports that the 1996 1er Crus from Defaix are very good. And its true. Golden yellow colour. Lightly vanilla’d, slightly butterscotchy aromas. Quite thick texture and full feel in the mouth, with a little butteriness. Clean, dry finish, but not as ‘sheer’ as, say, a minerally Montmains. More “warm climate” feel. Very good.
Note to self: boiling water in the bottle is the key to this one.
