For this round of sweet wines, I finally completed the Domaine des Forges set – and with the exam Côteaux du Layon. The quality of Chaume showed through, with more depth, complexity and botrytis. Pronounced crystal ginger and meaty fungal notes, with lots of quince paste character, and honey hints. Full bodied, and fully-sweet. Lots of ripe quince paste, sweet apple fruit and honey, with a ginger spiced finish. Broad palate. Quite long. Copper colour, deep enough to be similar to Tokaji.
