As I was finishing my Greek wine book, I started looking around for Greek wines, and quickly found 3 in 2 weeks, from the same (small and high-quality) producer from Santorini. This one is their classic blended Santorini OPAP, led by Assyrtiko, but with 5% each of Athiri and Aïdani to round-out the blend. This has no oak, apparently, which was surprising, because it had a distinct toasty note on day 1. By day 2, however, that was largely replaced by classic lemony notes. Austere citric / mineral palate, but not as extreme as I’d been led to believe. A good white though.
