This entertaining oddity was brought to the sparkling tasting by José-Luis. It confused me served blind, as I thought it was an NV, due to mature notes over fresh, youthful fruit. Turns out it’s a vintage Cava, but with Sherry used as the liquid for the dosage. 2007 vintage, and predominantly Chardonnay. Deep gold, with a persistent bead. Evolved cream and bruised fruit, with gentle toast. Firm texture. Dry. Yellow / stone fruit. Toasty mineral note.
