My favourite of the trio – a complex Palo Cortado that more than held its own alongside a Lustau Almacenista dry Palo Cortado (less complex) and the medium-sweet Apostoles. Mid-copper core fading through amber to a watery rim. Sweet Demerara sugar with honey, cinnamon and notable Cayenne pepper (!) hints. Caramel, vanilla and buttercream complexity over dried orange peel core aromas. Peppery, Cayenne notes with salty roast hazelnuts on the mid-palate, followed by rancio through the medium-long finish. Becomes toasty walnuts as it warms up. Almost could be sweet, but is bone dry. Starts full-bodied, but is actually medium! Very good
