Another high-quality co-operative in Languedoc, who dominate production of good Cremant and Blanquette de Limoux. Did the cave visite in a bit of a rush before the standard 12 / 12.30 lunch break… but was fun. First time I’ve seen gyropallets for remuage. Don’t think I had the chance to taste this one (one of their better cuvées), but it turned-out to be very pleasant, and a great toast to drink with Mum & Dad to celebrate Sarah’s pregnancy. Pale yellow gold, with a medium fine but persistent bead. Rich lemony and biscuit aromas, and more lemon on the palate – but distinctly lemon-cream flavour, like lemon meringue pie. Refreshing and fulfilling. Nice!
